披萨

揉面皮的时候,电视的新闻里说必胜客因为large pizza只卖$4.99,被同行以不正当竞争,扰乱市场而告上法庭。想想在上海,必胜客可从来不是随便吃吃的,2个人吃一顿100块是肯定要的。要是说和新疆大饼差不多,你会被人嘲笑为不识趣。
这里的意大利人多,所以披萨店也多,而且随便哪家味道都要远远胜过必胜客,只是多数只在下午甚至傍晚开门,我想这才是必胜客的卖点,应该发扬光大。
材料:

饼皮:高筋面粉:300克;水(牛奶):300克;橄榄油:30克;糖:20克;盐: 6克;酵母粉:5克;

Topping:家里只有ham ;菠萝罐头;辣椒丝;番茄酱;碎起司(家里有什么就吃什么,不用刻意)

做法:

  1. 约1/3水(牛奶)将酵母溶开,等候10分钟再用。
  2. 把饼皮材料与酵母水混合,放入面包机揉成光滑的面团。
  3. 用保鲜膜包好,放入预热过的烤箱里发酵60分钟。
  4. 取出面团,此时大约有两倍大,分成两份,揉成圆。
  5. 将面片放入披萨盘内,用手按压成四周厚中间薄的饼底。
  6. 再用叉子在饼皮上叉一些小洞,防止烘烤时膨胀。
  7. 刷上一层橄榄油,再涂一层番茄酱,再撒上一层碎起司。
  8. 摆上准备好的馅料,易熟的放在下面,难熟的放在上面,再撒上一层碎起司。
  9. 烤箱预热220度,放中层烤15-20分钟左右,表面金黄,边皮稍有焦黑。

第一次做披萨,面皮没弄得圆

材料:

375ml  warm water
2 teaspoons dried yeast
Pinch of caster sugar
600g plain flour
1 teaspoon salt
60ml olive oil, plus extra for brushing

做法:

  1. Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour and salt in a large bowl and make a well in the centre.  Add the yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until the mixture is combined. Use your hands to bring the dough together in the bowl.

  2. Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught-free place to rise for 30 minutes or until dough doubles in size.
