宫保鸡丁

食材:

鸡胸肉250克,油炸花生米60克,红绿椒20克,葱丁30克,姜片15克,小干辣椒5个,花椒15粒,辣酱20克,酱油15克,香醋10克,白糖20克,鸡粉2克,盐2克,胡椒粉,少许黄酒,15克水淀粉,花生油20克
 
做法:
 
  1. 先把鸡肉切丁,里面放入盐、胡椒粉、鸡精和黄酒抓匀。 放入两茶匙水淀粉抓匀,鸡丁浆制10分钟备用。 
  2.  勾兑碗芡,碗里先放入鸡精、白糖和香醋。碗芡里再放入酱油、黄酒、胡椒粉和盐,然后,再放入少许水淀粉和少许清水搅匀备用。 
  3.  炒勺上火烧热,注入凉油滑散鸡丁,鸡丁五成熟捞出备用。 
  4.  用锅中的底油炸香花椒粒,然后下入辣酱煸炒出红油。 
  5. 下入干辣椒粒炒香,再放入一半葱姜炒香。 
  6. 烹入碗芡炒匀,然后下入滑好的鸡丁用大火炒匀 
  7.  倒入配料翻炒数下。 
  8.  最后下入油炸花生米翻炒均匀。
  9.   翻炒均匀便可出锅码盘,此菜制作只需5分钟。
